Chef's Note
For extra texture and flavor, try toasting the oats and walnuts in a dry skillet for 5 minutes before adding them to the recipe. This brings out their nutty flavor and adds a wonderful depth to these bars. These bars also freeze beautifully - wrap individually and thaw at room temperature when needed.

2 whole medium apples (preferably Honeycrisp or Granny Smith)
1 tablespoon lemon juice
1/4 cup chopped walnuts

1 tablespoon milk
1/4 teaspoon ground cinnamon (for drizzle)

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.

Peel, core, and dice the 2 apples into small 1/4-inch cubes. Toss with 1 tablespoon of lemon juice to prevent browning and set aside.

In a medium bowl, whisk together 1 cup of rolled oats, 1/2 cup of whole wheat flour, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, 1/4 teaspoon of ground ginger, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.

In a large bowl, cream together 1/4 cup of unsalted butter and 1/3 cup of brown sugar until light and fluffy, about 2 minutes.

Add 2 tablespoons of honey, 1 large egg, and 1 teaspoon of vanilla extract to the butter mixture. Beat until well combined.

Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

Gently fold in the diced apples and 1/4 cup of chopped walnuts.

Spread the batter evenly into the prepared baking pan, pressing it down slightly with a spatula.

Bake for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Allow the bars to cool in the pan for 10 minutes, then use the parchment paper overhang to lift them out onto a wire rack to cool completely.

While the bars are cooling, prepare the cinnamon drizzle by whisking together 1/2 cup of powdered sugar, 1 tablespoon of milk, and 1/4 teaspoon of ground cinnamon until smooth. Add more milk if needed to reach a drizzling consistency.

Once the bars are completely cool, drizzle the cinnamon mixture over the top in a zigzag pattern.
