For the most tender lamb chops, look for chops that are at least 1-inch thick and allow them to come to room temperature for about 20 minutes before cooking. The air fryer gives you perfectly cooked lamb without the mess of pan-searing, but watch them closely as cooking times may vary between different air fryer models.

8 chops (about 2 lbs) lamb loin chops
2 tablespoons, chopped fresh rosemary
1 tablespoon, chopped fresh thyme
4 cloves, minced garlic
3 tablespoons, divided olive oil
1 teaspoon lemon zest
1 teaspoon, divided salt
1/2 teaspoon, divided black pepper
1 medium, diced eggplant
1 medium, diced zucchini
1 medium, diced yellow squash
1 medium, diced red bell pepper
1 medium, diced yellow onion
1 cup, halved cherry tomatoes
1/4 cup, chopped fresh basil

In a small bowl, combine 2 tablespoons olive oil, minced garlic, chopped rosemary, chopped thyme, lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Pat the lamb chops dry with paper towels and rub the herb mixture all over them. Let marinate at room temperature for 15 minutes.

Meanwhile, prepare the ratatouille. Heat 1 tablespoon olive oil in a large skillet over medium heat.

Add the diced onion and cook for 3-4 minutes until softened.

Add the diced eggplant, zucchini, yellow squash, and bell pepper to the skillet. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Cook the vegetables for about 15 minutes, stirring occasionally, until they are tender but not mushy.

Add the halved cherry tomatoes and cook for another 5 minutes until they begin to break down slightly.

Preheat your air fryer to 400°F (200°C) for 3 minutes.

Place the lamb chops in the air fryer basket in a single layer, working in batches if necessary.

Cook the lamb chops for 8-10 minutes for medium-rare (internal temperature of 135°F/57°C), flipping halfway through. For medium, cook for 10-12 minutes (internal temperature of 145°F/63°C).
