Chef's Note
For extra flavor, marinate the mushroom caps in a mixture of olive oil, lemon juice, and minced garlic for 30 minutes before stuffing. If you prefer a meatier version that still fits the dietary restrictions, you can add 1/4 cup of diced cooked chicken or ground turkey to the filling.

4 whole large portobello mushrooms
2 tablespoons olive oil
3 cloves, minced garlic
1 medium, diced red bell pepper
1 small, diced zucchini
1/2 medium, diced red onion
2 cups, fresh spinach
1/3 cup, crumbled feta cheese
1/4 cup, pitted and chopped kalamata olives
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Clean the portobello mushrooms by gently wiping with a damp paper towel and removing stems. Scrape out the gills with a spoon to create more room for filling.

Brush mushroom caps with 1 tablespoon olive oil on both sides and season with a pinch of salt and pepper. Set aside.

Heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

Add diced red bell pepper, zucchini, and red onion to the skillet. Cook for 5-6 minutes until vegetables begin to soften.

Add spinach to the vegetable mixture and cook for 1-2 minutes until wilted. Remove from heat.

Stir in crumbled feta cheese, chopped kalamata olives, lemon juice, dried oregano, salt, and black pepper into the vegetable mixture.

Divide the filling evenly among the prepared mushroom caps, mounding slightly.

Preheat air fryer to 375°F (190°C) for 3 minutes.

Place stuffed mushrooms in the air fryer basket, being careful not to overcrowd (cook in batches if necessary).
