Chef's Note
For the best flavor, allow the mozzarella to come to room temperature for about 10 minutes before serving. If you can find mozzarella pearls that are already marinated, you can use those to save time, but I recommend adding the fresh herbs to enhance the flavor.

8 oz fresh mozzarella pearls
1 pint cherry tomatoes
3 tbsp extra virgin olive oil
1/4 cup fresh basil leaves
1 tsp fresh thyme leaves
1 tsp lemon zest
1 tbsp lemon juice
1 small garlic clove, minced
1/2 tsp sea salt
1/4 tsp black pepper
12 wooden skewers, 6-inch

Soak 12 wooden skewers in water for 10 minutes to prevent splintering.

In a medium bowl, whisk together 3 tbsp extra virgin olive oil, 1 tbsp lemon juice, 1 tsp lemon zest, 1 minced garlic clove, 1/2 tsp sea salt, and 1/4 tsp black pepper.

Drain the 8 oz mozzarella pearls and pat dry with paper towels. Add them to the marinade and gently toss to coat.

Wash and halve any larger cherry tomatoes, keeping smaller ones whole. You should have about 24 tomato pieces total.

Tear or chop 1/4 cup fresh basil leaves into small pieces and add to the marinade along with 1 tsp fresh thyme leaves.

Cover the bowl and refrigerate for 30 minutes to allow flavors to develop.

Remove the marinated cheese mixture from the refrigerator and drain off excess marinade, reserving it for drizzling later.

Thread the marinated mozzarella pearls and cherry tomatoes onto the soaked skewers, alternating between cheese and tomatoes (about 2 of each per skewer).

Arrange the skewers on a serving platter and drizzle with the reserved marinade.
