Chef's Note
For the best texture, make sure your Greek yogurt is at room temperature for about 10 minutes before assembling. This makes it creamier and easier to layer. If you need a touch of sweetness without adding sugar, try adding a few drops of liquid stevia or monk fruit extract to the yogurt mixture.

2 cups full-fat Greek yogurt
1 cup fresh strawberries, hulled and sliced
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1/4 cup sliced almonds
2 tablespoons almond butter
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/2 teaspoon lemon zest
6 leaves fresh mint leaves for garnish

In a small dry skillet, toast 1/4 cup sliced almonds over medium-low heat for 3-5 minutes until lightly golden and fragrant, stirring frequently to prevent burning. Remove from heat and set aside to cool.

In a medium bowl, combine 2 cups Greek yogurt with 1/2 teaspoon vanilla extract and 1/4 teaspoon ground cinnamon. Stir until well combined.

Gently wash all berries and pat dry with paper towels. Hull and slice 1 cup of strawberries.

In a small bowl, mix 2 tablespoons almond butter with 1 tablespoon of the yogurt mixture to create a more fluid consistency for drizzling.

To assemble each parfait, place 1/4 cup of the yogurt mixture at the bottom of each serving glass or bowl.

Layer with 1/4 cup of mixed berries on top of the yogurt.

Sprinkle 1 tablespoon of toasted almonds over the berries.

Drizzle 1/2 tablespoon of the thinned almond butter mixture.

Repeat the layers once more, ending with a final layer of yogurt on top.

Garnish each parfait with remaining berries, a sprinkle of the remaining toasted almonds, and 1/4 teaspoon lemon zest.
