For a more elegant presentation, layer the ingredients in clear glasses to create a parfait effect. You can also prepare the mascarpone cream up to 24 hours ahead and store it covered in the refrigerator.

4 oz mascarpone cheese
1/4 cup heavy cream
1/2 tsp vanilla extract
1/2 tsp lemon zest
1 cup fresh strawberries
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1/2 cup fresh blackberries
6 leaves fresh mint leaves
2 tbsp toasted sliced almonds

In a medium bowl, combine 4 oz of mascarpone cheese with 1/4 cup heavy cream. Whip with an electric mixer on medium speed for 2-3 minutes until soft peaks form.

Gently fold in 1/2 tsp vanilla extract and 1/2 tsp lemon zest into the whipped mascarpone mixture.

Wash all berries thoroughly and pat dry with paper towels. Hull and quarter the strawberries if they're large.

In a dry skillet over medium heat, toast 2 tbsp sliced almonds for 2-3 minutes until golden brown, stirring frequently to prevent burning. Remove from heat and set aside to cool.

To assemble, divide the berry mixture between two serving bowls or glasses.

Top each portion with a generous dollop of the whipped mascarpone cream.

Garnish with toasted almonds and fresh mint leaves, torn if large.
