For a make-ahead option, prepare the herbed goat cheese mixture up to 2 days in advance and store in an airtight container. Assemble just before serving to keep the cucumbers crisp. You can also experiment with different herb combinations based on what's fresh and available.

1 medium English cucumber
4 oz soft goat cheese
1 tablespoon fresh dill
1 tablespoon fresh chives
1 teaspoon fresh thyme leaves
1 teaspoon lemon zest
1 teaspoon lemon juice
1 teaspoon extra virgin olive oil
1/4 teaspoon black pepper
1/8 teaspoon sea salt
6 small cherry tomatoes
1/4 cup microgreens

Remove the goat cheese from the refrigerator and allow it to soften at room temperature for about 10 minutes.

Wash the cucumber thoroughly and pat dry with paper towels. Slice the cucumber into 1/4-inch thick rounds (about 20-24 slices).

Finely chop 1 tablespoon of fresh dill and 1 tablespoon of fresh chives. Remove 1 teaspoon of thyme leaves from their stems.

In a small mixing bowl, combine 4 oz of softened goat cheese with the chopped herbs, 1 teaspoon of lemon zest, 1 teaspoon of lemon juice, 1 teaspoon of olive oil, 1/4 teaspoon of black pepper, and 1/8 teaspoon of sea salt.

Mix the herbed cheese mixture thoroughly until all ingredients are well incorporated and the texture is smooth and spreadable.

Using a small spoon or piping bag, place about 1 teaspoon of the herbed goat cheese mixture onto each cucumber slice.

Wash and halve 6 cherry tomatoes. Place a tomato half on top of several of the cucumber rounds for color and flavor contrast.

Arrange the prepared cucumber slices on a serving platter and garnish with 1/4 cup of microgreens.
