Chef's Note
For extra creaminess, you can substitute half the water with milk when cooking the couscous. If you prepare the apples the night before and refrigerate them, you can have this breakfast ready in just 10 minutes in the morning!

1 cup whole wheat couscous
1.5 cups water
1/4 teaspoon salt
2 medium apples
2 tablespoons butter
3 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
1/2 cup milk
1/4 cup walnuts
1/4 cup dried cranberries
2 tablespoons honey

Wash, core, and dice 2 medium apples into 1/2-inch cubes. Leave the skin on for extra fiber and color.

In a medium saucepan, bring 1.5 cups of water and 1/4 teaspoon of salt to a boil.

Add 1 cup of whole wheat couscous to the boiling water, stir once, cover with a lid, and remove from heat. Let stand for 5 minutes.

While the couscous is absorbing the water, melt 2 tablespoons of butter in a large skillet over medium heat.

Add the diced apples to the skillet and cook for 5 minutes, stirring occasionally, until they begin to soften.

Sprinkle 3 tablespoons of brown sugar, 1 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg over the apples. Stir to coat evenly and cook for another 3-5 minutes until the apples are tender but still hold their shape.

Stir in 1 teaspoon of vanilla extract and remove from heat.

Fluff the couscous with a fork and transfer it to the skillet with the spiced apples.

Add 1/2 cup of milk and stir gently to combine all ingredients. Return to low heat for 2-3 minutes until warmed through.

Remove from heat and fold in 1/4 cup of chopped walnuts and 1/4 cup of dried cranberries.

Divide the warm apple spice couscous among four bowls and drizzle each serving with 1/2 tablespoon of honey before serving.
