Chef's Note
For the best texture and flavor, use a firm, crisp apple like Honeycrisp, Braeburn, or Gala. They hold their shape well during baking and offer a nice balance of sweet and tart. You can also assemble this the night before (without the nut topping), cover, and refrigerate. Just add 5-10 minutes to the baking time in the morning!

In a medium skillet over medium heat, melt 2 tbsp of unsalted butter. Add the 2 diced apples, 1/4 cup of light brown sugar, 1 tsp of the ground cinnamon, and 1/4 tsp of ground nutmeg. Sauté for 5-7 minutes, stirring occasionally, until the apples are slightly softened and the sugar has created a fragrant, syrupy glaze. Remove from heat.

In a large mixing bowl, combine the dry ingredients: 2 cups of rolled oats, 1 tsp of baking powder, 1/2 tsp of salt, and the remaining 1/2 tsp of ground cinnamon. Whisk them together to ensure they are evenly distributed.

In a separate medium bowl, whisk together the wet ingredients: 2 cups of milk, 2 large eggs, 1/4 cup of maple syrup, and 1 tsp of vanilla extract. Whisk until the eggs are fully incorporated and the mixture is smooth.

Pour the wet ingredients into the large bowl with the dry ingredients. Add the sautéed apple mixture from the skillet and stir everything together with a spatula until just combined. Be careful not to overmix.
