Chef's Note
For extra fluffy waffles, separate the eggs and whip the whites until soft peaks form, then fold them into the batter at the end. If you don't have pumpkin pie spice, make your own by combining 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon nutmeg, and 1/4 teaspoon cloves.

In a large bowl, whisk together 1 cup whole wheat flour, 1/2 cup rolled oats, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 2 teaspoons pumpkin pie spice, and 1/2 teaspoon cinnamon.

In a separate bowl, combine 1 cup pumpkin puree, 1 cup milk, 2 large eggs, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and 3 tablespoons melted butter. Whisk until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Some small lumps are okay - avoid overmixing.

Let the batter rest for 5 minutes while preheating your waffle iron according to manufacturer's instructions.

Lightly coat the waffle iron with cooking spray before each waffle.

Pour approximately 1/2 cup of batter (or the amount recommended for your waffle iron) onto the preheated waffle iron and close the lid.
