This recipe makes extra granola that you can store in an airtight container for up to two weeks. For a time-saving variation, prepare a batch of granola on the weekend to enjoy quick breakfast bowls throughout the week. You can also customize with seasonal fruits like peaches in summer or poached pears in fall.

1 cup old-fashioned rolled oats
1/4 cup raw almonds, roughly chopped
1/4 cup raw walnuts, roughly chopped
2 tablespoons sunflower seeds
2 tablespoons shredded unsweetened coconut
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
3 tablespoons honey
2 tablespoons coconut oil, melted
1/2 teaspoon vanilla extract
3/4 cup Greek yogurt
1/2 cup fresh berries (strawberries, blueberries, raspberries)
1/2 medium banana
1 teaspoon honey or maple syrup for drizzling

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, combine 1 cup of rolled oats, 1/4 cup of chopped almonds, 1/4 cup of chopped walnuts, 2 tablespoons of sunflower seeds, 2 tablespoons of shredded coconut, 1/2 teaspoon of cinnamon, 1/8 teaspoon of nutmeg, and 1/4 teaspoon of salt.

In a small bowl, whisk together 3 tablespoons of honey, 2 tablespoons of melted coconut oil, and 1/2 teaspoon of vanilla extract.

Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.

Spread the mixture evenly on the prepared baking sheet.

Bake for 20-25 minutes, stirring every 10 minutes, until the granola is golden brown.

Remove from the oven and let cool completely (about 15-20 minutes). The granola will crisp up as it cools.

While the granola cools, wash and slice the fruit. Cut strawberries into quarters, slice the banana, and rinse the blueberries and raspberries if using.

To assemble the bowl, spoon 3/4 cup of Greek yogurt into a serving bowl.

Top with about 1/2 cup of the cooled homemade granola.

Arrange 1/2 cup of mixed berries and sliced banana on top.
