Chef's Note

For the best lettuce wraps, choose romaine lettuce with large, sturdy leaves. If you'd like to prep ahead, you can make the taco-spiced beef mixture up to two days in advance and simply reheat it when ready to serve. Just wait to prepare the avocado until right before eating to prevent browning.

Ingredients
  • 6 oz lean ground beef

  • 1/2 medium avocado

  • 6 large leaves romaine lettuce

  • 1/4 small red onion

  • 1 medium tomato

  • 1/2 lime

  • 1 clove garlic

  • 1 tsp chili powder

  • 1/2 tsp ground cumin

  • 1/4 tsp paprika

  • 1/4 tsp dried oregano

  • 1/4 tsp salt

  • 1/8 tsp black pepper

  • 1 tsp olive oil

  • 1/4 cup shredded cheddar cheese

  • 2 tbsp sour cream

  • 1 tbsp fresh cilantro

Instructions
  • 1

Wash and dry 6 large romaine lettuce leaves, then set aside.

  • 2

Dice 1 medium tomato and 1/4 small red onion. Mince 1 garlic clove. Chop 1 tbsp fresh cilantro.

  • 3

Cut 1/2 medium avocado into small cubes and squeeze 1 tsp lime juice over it to prevent browning.

  • 4

In a small bowl, mix together 1 tsp chili powder, 1/2 tsp ground cumin, 1/4 tsp paprika, 1/4 tsp dried oregano, 1/4 tsp salt, and 1/8 tsp black pepper to create your taco seasoning.

  • 5

Heat 1 tsp olive oil in a medium skillet over medium heat.

  • 6

Add minced garlic and diced onion to the skillet and sauté for 2 minutes until fragrant and slightly translucent.

  • 7

Add 6 oz lean ground beef to the skillet and break it up with a wooden spoon. Cook for about 5-7 minutes until no longer pink.

  • 8

Sprinkle the taco seasoning over the ground beef and stir to coat evenly. Cook for another 2 minutes to allow flavors to blend.

  • 9

Squeeze juice from 1/4 lime over the cooked beef mixture and stir.

  • 10

Arrange the lettuce leaves on a plate to create taco shells.

  • 11

Divide the beef mixture evenly among the lettuce leaves.

  • 12

Top each lettuce wrap with diced tomato, avocado cubes, shredded cheddar cheese, a dollop of sour cream, and sprinkle with chopped cilantro.

  • 13

Serve with the remaining lime wedges on the side.
