Chef's Note
For a time-saving variation, prepare a large batch of the granola on the weekend and store it in an airtight container for up to two weeks. This way, you can assemble this nutritious breakfast in just 2 minutes on busy mornings. For a dairy-free version, substitute the milk and yogurt with your favorite plant-based alternatives.

Ingredients
1/2 cup homemade granola
1 cup old-fashioned rolled oats
1/4 cup sliced almonds
1/4 cup chopped walnuts
3 tablespoons honey
2 tablespoons coconut oil
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
3/4 cup cold milk
1/4 cup Greek yogurt
1/2 cup fresh mixed berries (strawberries, blueberries, raspberries)
1/2 medium sliced banana
Instructions
- 1
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- 2
In a medium bowl, combine 1 cup of rolled oats, 1/4 cup of sliced almonds, and 1/4 cup of chopped walnuts.
- 3
In a small saucepan over low heat, warm 2 tablespoons of coconut oil until melted. Add 3 tablespoons of honey and stir until combined.
- 4
Remove from heat and stir in 1/2 teaspoon of ground cinnamon and 1/2 teaspoon of vanilla extract.
- 5
Pour the honey mixture over the oat mixture and stir until all dry ingredients are well coated.
- 6
Spread the mixture evenly on the prepared baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown. Let cool completely (it will crisp up as it cools).
- 7
In a serving bowl, pour 3/4 cup of cold milk.
- 8
Add 1/4 cup of Greek yogurt and stir gently to create a creamy base.
- 9
Top with 1/2 cup of the homemade granola (store the rest in an airtight container for future use).
- 10
Arrange 1/2 cup of mixed berries and 1/2 sliced banana on top of the granola.
- 11
Serve immediately while the granola is still crunchy.
