Chef's Note
For a time-saving tip, you can cook the farro the night before and refrigerate it. In the morning, simply reheat with a splash of milk before adding the toppings. You can also customize this breakfast by using different seasonal fruits like pears or berries.

1/4 cup maple syrup
1 cup milk
2 medium apples
1 tablespoon butter
2 tablespoons brown sugar
1/3 cup chopped walnuts
1/4 cup dried cranberries

Rinse 1 cup of farro under cold water in a fine mesh strainer.

In a medium saucepan, combine the rinsed farro with 3 cups of water and 1/4 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until the farro is tender but still chewy.

While the farro cooks, core and dice 2 medium apples into 1/2-inch cubes.

In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples and cook for 3-4 minutes until they begin to soften.

Add 2 tablespoons of brown sugar to the apples and continue cooking for another 2-3 minutes until the apples are tender and caramelized. Set aside.

When the farro is cooked, drain any excess water and return it to the pot.

Stir in 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, and 1/4 cup of maple syrup into the farro. Mix well to combine.

Add 1 cup of milk to the farro mixture and stir gently. Warm over low heat for 2-3 minutes until the mixture is creamy and heated through.

Divide the farro mixture into four serving bowls. Top each bowl with the caramelized apples.

Sprinkle each serving with chopped walnuts and dried cranberries before serving.
