Chef's Note
For extra flavorful fritters, try using corn that's been lightly charred in a dry pan for 2-3 minutes before adding to the batter. This adds a subtle smokiness that pairs beautifully with the bacon. If corn isn't in season, frozen corn works just as well - just thaw and pat dry first!

1 teaspoon baking powder

2 large eggs
1/3 cup milk
2 cups fresh or frozen corn kernels
3 medium green onions, sliced
1/2 medium red bell pepper, finely diced
2 tablespoons fresh cilantro, chopped
8 slices bacon
3 tablespoons vegetable oil
1/2 cup sour cream
1 small lime, juiced
1 tablespoon honey

In a large bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of paprika.

In a separate bowl, beat 2 large eggs and add 1/3 cup of milk. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in 2 cups of corn kernels, 3 sliced green onions, 1/2 diced red bell pepper, and 2 tablespoons of chopped cilantro.

In a large skillet over medium heat, cook 8 slices of bacon until crispy, about 8-10 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain excess grease. Keep warm.

In the same skillet, remove all but 1 tablespoon of bacon grease (or discard all and add 1 tablespoon of vegetable oil).

Heat the skillet over medium heat and drop 1/4 cup portions of the corn batter into the pan, cooking 3-4 fritters at a time. Cook for about 3-4 minutes per side until golden brown and cooked through.

Transfer cooked fritters to a plate lined with paper towels. Continue with remaining batter, adding more oil as needed between batches.

While fritters cook, mix 1/2 cup of sour cream with the juice of 1 small lime and 1 tablespoon of honey to create a simple sauce.
