Chef's Note
These oatmeal squares can be made ahead and refrigerated for up to 4 days. Simply reheat individual squares in the microwave for 30-45 seconds. For extra flavor, try using Bosc or Anjou pears when they're in season!

2 cups rolled oats
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1 1/2 cups milk
2 large eggs
1 teaspoon vanilla extract
3 tablespoons unsalted butter
2 medium ripe pears
1/3 cup chopped walnuts
2 tablespoons maple syrup
1 spray cooking spray

Preheat your oven to 350°F (175°C). Lightly coat an 8x8 inch baking dish with cooking spray.

In a large bowl, mix 2 cups of rolled oats, 2 teaspoons of ground cinnamon, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.

In a separate bowl, whisk together 1/4 cup of brown sugar, 1 1/2 cups of milk, 2 large eggs, and 1 teaspoon of vanilla extract until well combined.

Melt 2 tablespoons of unsalted butter and stir into the wet ingredients.

Core and dice the 2 pears into 1/2-inch cubes (leave the skin on for added texture and nutrients).

Add the wet ingredients to the dry ingredients and stir until just combined.

Fold in the diced pears and 1/4 cup of the chopped walnuts, reserving the remaining walnuts for topping.

Pour the mixture into the prepared baking dish and spread evenly.

Melt the remaining 1 tablespoon of butter and mix with 2 tablespoons of maple syrup. Drizzle this mixture over the top of the oatmeal.

Sprinkle the remaining chopped walnuts on top.

Bake for 30 minutes, or until the top is golden brown and the oatmeal has set.
