Chef's Note
The key to perfectly baked cod is to avoid overcooking. The fish is done when it just turns opaque and flakes easily with a fork. If your fillets are different thicknesses, arrange them in the pan with thicker pieces toward the outside for more even cooking.

3 tablespoons olive oil
2 tablespoons fresh lemon juice
4 cloves garlic

1/4 cup Parmesan cheese
1 teaspoon salt

1 lemon
1 cup cherry tomatoes

Preheat your oven to 400°F (200°C) and lightly grease a baking dish with 1 tablespoon of olive oil.

Pat the 1.5 pounds of cod fillets dry with paper towels and arrange them in the prepared baking dish.

In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 4 minced garlic cloves, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Drizzle the olive oil mixture evenly over the cod fillets, making sure each piece is well coated.

In another bowl, combine 1/2 cup of panko breadcrumbs, 1/4 cup of grated Parmesan cheese, 2 tablespoons of chopped parsley, 1 tablespoon of chopped thyme, and 1 teaspoon of chopped rosemary.

Add 2 tablespoons of melted butter to the breadcrumb mixture and stir until well combined.

Sprinkle the herbed breadcrumb mixture evenly over the cod fillets, pressing gently to adhere.
