These oatmeal squares can be made ahead and refrigerated for up to 4 days. For the best texture when reheating, add a splash of milk and microwave for 30-45 seconds. You can customize with seasonal fruits like blueberries in summer or diced apples in fall.

1 tsp baking powder
1 tsp ground cinnamon

1 3/4 cups milk
1/3 cup pure maple syrup
2 large eggs
3 tbsp unsalted butter
2 tsp vanilla extract
1 medium banana
1/3 cup chopped walnuts
1/4 cup dried cranberries

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with cooking spray or line with parchment paper.

In a large bowl, combine 2 cups rolled oats, 1 tsp baking powder, 1 tsp ground cinnamon, and 1/4 tsp salt. Mix well.

In a separate medium bowl, whisk together 1 3/4 cups milk, 1/3 cup maple syrup, 2 large eggs, 3 tbsp melted butter, and 2 tsp vanilla extract.

Add the 1 mashed banana to the wet ingredients and stir until combined.

Pour the wet ingredients into the dry ingredients and stir until everything is well incorporated.

Fold in 1/4 cup of the chopped walnuts and all of the dried cranberries (1/4 cup).

Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the remaining walnuts on top.

Bake for 30-35 minutes, until the oatmeal is set and golden brown on top.

Let cool for 10 minutes before cutting into 4 squares. Serve warm with additional maple syrup if desired.
