Chef's Note
For the best flavor absorption, use day-old bread that's slightly stale. This prevents the French toast from becoming too soggy in the center while ensuring a crisp exterior and custardy interior.

Ingredients
8 slices thick-cut bread (brioche or challah)
4 large eggs
1 cup milk
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar
1/4 teaspoon salt
3 tablespoons butter
1/4 cup maple syrup
1 cup fresh berries (optional)
2 tablespoons powdered sugar (optional)
Instructions
- 1
In a large shallow bowl, whisk together 4 large eggs, 1 cup milk, 1 teaspoon vanilla extract, 1 tablespoon ground cinnamon, 1/4 teaspoon ground nutmeg, 2 tablespoons brown sugar, and 1/4 teaspoon salt until well combined.
- 2
Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter.
- 3
Dip each slice of bread into the egg mixture, allowing it to soak for about 20 seconds on each side. Let excess mixture drip off.
- 4
Place 2-3 slices of soaked bread onto the heated skillet and cook for 3-4 minutes on each side until golden brown and slightly crisp on the edges.
- 5
Transfer cooked French toast to a warm plate and repeat with remaining slices, adding 1 tablespoon butter to the pan before each new batch.
- 6
Serve warm with maple syrup drizzled over the top, and garnish with fresh berries and a light dusting of powdered sugar if desired.
