
Pizza Quesadillas with Fresh Veggie Sticks

Chef's Note
For a healthier version, use whole wheat tortillas and add some finely chopped spinach or other vegetables to the quesadilla filling. You can also customize these with your family's favorite pizza toppings - try mushrooms, olives, or ham!

12 tortillas flour tortillas (8-inch)
1 cup pizza sauce
2 cups shredded mozzarella cheese
4 oz pepperoni slices
2 tablespoons olive oil
3 medium carrots
1 large cucumber
1 large bell pepper (any color)
1/2 cup ranch dressing
1 teaspoon Italian seasoning
Instructions

Wash and peel 3 medium carrots, 1 large cucumber, and 1 large bell pepper. Cut them into sticks about 3-4 inches long. Arrange on a plate with 1/2 cup ranch dressing for dipping.

Place a large skillet over medium heat and add 1 teaspoon of olive oil.

Lay 1 flour tortilla in the skillet and spread 1-2 tablespoons of pizza sauce on top.

Sprinkle about 1/3 cup of shredded mozzarella cheese over the sauce.

Add 6-8 pepperoni slices on top of the cheese.

Sprinkle a pinch of Italian seasoning over the pepperoni.

Top with another tortilla and press down gently with a spatula.

Cook for 2-3 minutes until the bottom tortilla is golden brown.

Carefully flip the quesadilla and cook for another 2-3 minutes until the cheese is melted and the other side is golden brown.

Remove from skillet and place on a cutting board. Cut into 4 triangles.

Repeat steps 2-10 with remaining ingredients to make 6 quesadillas total.

Serve each person 1 quesadilla (4 triangles) with a side of fresh veggie sticks and ranch dressing.
