Chef's Note
This family-friendly meal comes together quickly and can be easily customized. For a spicier version, add diced jalapeños or hot sauce. You can also substitute ground turkey for the beef to reduce fat content. Leftovers reheat beautifully for lunch the next day!

1 pound ground beef
1 packet (1 oz) taco seasoning packet
12 ounces rotini pasta
1 cup salsa
1 cup canned corn
2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 teaspoon salt
3 stalks green onions

Preheat oven to 375°F (190°C).

Bring a large pot of salted water to a boil. Add 12 ounces of rotini pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and set aside.

While pasta is cooking, brown 1 pound of ground beef in a large skillet over medium heat until no longer pink, about 5-7 minutes.

Add 1 packet of taco seasoning and 2/3 cup water to the ground beef. Simmer for 2-3 minutes until slightly thickened.

In a large bowl, combine the cooked pasta, seasoned beef, 1 cup salsa, 1 cup corn, 1 cup shredded cheddar cheese, and 1/2 teaspoon salt. Mix well.

Transfer the mixture to a 9x13 inch baking dish. Top with the remaining 1 cup of shredded cheddar cheese.

Bake for 10 minutes until the cheese is melted and bubbly.

Remove from oven and let cool for 5 minutes. Top with 1/2 cup sour cream and chopped green onions before serving.
