For the crispiest apple chips, slice them as uniformly thin as possible. If you don't have a mandoline, use a very sharp knife and take your time. The chips will continue to crisp as they cool, so don't worry if they're still slightly pliable when you remove them from the oven. Store any leftover chips in an airtight container for up to 3 days.

Wash and dry 4 large Honeycrisp apples thoroughly.

Using a mandoline slicer set to 1/8-inch thickness, carefully slice the apples into thin rounds. Remove any seeds or tough core pieces.

In a small bowl, mix 2 teaspoons of ground cinnamon with 1 tablespoon of coconut sugar.

Place the apple slices in a large bowl and drizzle with 1 tablespoon of fresh lemon juice, tossing gently to coat (this prevents browning).

Sprinkle the cinnamon-sugar mixture over the apple slices and toss gently until evenly coated.

Arrange the apple slices in a single layer on the prepared baking sheets, ensuring they don't overlap.
