Chef's Note
For extra fluffy waffles, separate the eggs and whip the whites to soft peaks before folding them into the batter as the final step. If you don't have buttermilk on hand, you can make a quick substitute by adding 2 tablespoons of lemon juice or white vinegar to 2 cups of milk and letting it sit for 5 minutes before using.

1 1/2 cups whole wheat flour
1/2 cup old-fashioned rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 cups buttermilk
2 large eggs
2 tablespoons maple syrup
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted
3 cups mixed berries (strawberries, blueberries, raspberries)
3 tablespoons sugar
1 tablespoon lemon juice
1/2 teaspoon lemon zest

Preheat your waffle iron according to manufacturer's instructions.

In a food processor, pulse 1/2 cup of rolled oats until coarsely ground (not as fine as flour).

In a large bowl, whisk together 1 1/2 cups of whole wheat flour, the ground oats, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, and 1 teaspoon of ground cinnamon.

In another bowl, whisk together 2 cups of buttermilk, 2 large eggs, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, and 3 tablespoons of melted butter.

Pour the wet ingredients into the dry ingredients and stir just until combined. Some lumps are okay; avoid overmixing.

Let the batter rest for 5 minutes while you prepare the berry compote.

For the compote, combine 3 cups of mixed berries, 3 tablespoons of sugar, 1 tablespoon of lemon juice, and 1/2 teaspoon of lemon zest in a medium saucepan.

Cook the berry mixture over medium heat for 5-7 minutes, stirring occasionally, until the berries break down slightly and the sauce thickens. Remove from heat and set aside.

Spray the waffle iron with cooking spray. Pour about 1/2 cup of batter (or the amount recommended for your waffle iron) onto the center of the preheated iron.

Close the lid and cook until the waffle is golden brown and crisp, about 3-5 minutes depending on your waffle iron.
