Chef's Note
For extra crispy french toast sticks, let the bread sit out for 30 minutes before dipping in the egg mixture. This allows the bread to dry slightly, helping it absorb more of the custard mixture without becoming soggy. You can also prepare these ahead of time and freeze them - just reheat in a toaster oven for a quick weekday breakfast!

Ingredients
10 slices thick-cut bread
4 large eggs
1 cup milk
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
3 tablespoons butter
1/2 cup maple syrup
2 tablespoons powdered sugar
1 cup fresh berries
Instructions
- 1
Cut each slice of bread into 3 even sticks (you'll have 30 sticks total).
- 2
In a shallow bowl, whisk together 4 large eggs, 1 cup milk, 2 teaspoons vanilla extract, 1 1/2 teaspoons ground cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt until well combined.
- 3
Heat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and allow it to melt.
- 4
Dip bread sticks into the egg mixture, allowing excess to drip off, then place in the hot skillet. Don't overcrowd the pan - work in batches of 8-10 sticks at a time.
- 5
Cook for 2-3 minutes per side, until golden brown and crispy on the outside.
- 6
Transfer cooked sticks to a wire rack set over a baking sheet. Place in a 200°F oven to keep warm while cooking remaining batches.
- 7
Repeat with remaining bread sticks, adding 1 tablespoon butter to the pan for each new batch.
- 8
In a small bowl, mix the remaining 1/2 teaspoon cinnamon with 2 tablespoons powdered sugar.
- 9
Arrange french toast sticks on a serving platter, dust with the cinnamon-sugar mixture, and serve with 1/2 cup maple syrup and 1 cup fresh berries on the side.
