This trail mix is completely customizable based on your family's preferences. For younger children, you might want to chop the larger nuts into smaller pieces. The light toasting of the nuts and seeds brings out their natural flavors and adds a wonderful crunch. For a special treat, add a few yogurt-covered raisins or small pretzel pieces. Store in a cool place as the chocolate can melt if kept in warm areas.

1 cup raw cashews
1/2 cup raw walnuts
1/2 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/2 cup unsweetened coconut flakes
1/2 cup dried cranberries

1/4 cup dried apricots, chopped
1/3 cup dark chocolate chips
3 tablespoons pure maple syrup
1 tablespoon coconut oil
1 teaspoon cinnamon
1 teaspoon vanilla extract

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

In a large bowl, combine 1 cup raw almonds, 1 cup raw cashews, 1/2 cup raw walnuts, 1/2 cup raw pumpkin seeds, 1/4 cup raw sunflower seeds, and 1/2 cup unsweetened coconut flakes.

In a small saucepan over low heat, melt 1 tablespoon coconut oil. Add 3 tablespoons maple syrup, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, and 1/4 teaspoon sea salt. Stir until well combined, about 1 minute.

Pour the maple syrup mixture over the nut and seed mixture and toss until everything is evenly coated.

Spread the mixture in an even layer on the prepared baking sheet.

Bake for 15 minutes, stirring halfway through to ensure even toasting. Watch carefully to prevent burning, especially the coconut flakes.

Remove from the oven and let cool completely on the baking sheet, about 20 minutes. The mixture will crisp up as it cools.

Once cooled, transfer the mixture to a large bowl and add 1/2 cup dried cranberries, 1/4 cup dried blueberries, 1/4 cup chopped dried apricots, and 1/3 cup dark chocolate chips. Toss gently to combine.
