For busy mornings, prepare these parfait cups the night before and store them in the refrigerator. The homemade granola can be made in larger batches and stored in an airtight container for up to two weeks, making assembly even quicker. 1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
2 tablespoons maple syrup
1 teaspoon lemon zest

Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, combine 1 cup of rolled oats, 2 tablespoons of honey, 2 tablespoons of melted coconut oil, 1/3 cup of sliced almonds, 1/4 cup of pumpkin seeds, 1 teaspoon of ground cinnamon, 1/2 teaspoon of vanilla extract, and 1/8 teaspoon of salt.

Spread the granola mixture evenly on the prepared baking sheet and bake for 15 minutes, stirring halfway through, until golden brown. Allow to cool completely.

While the granola is cooling, prepare the berry mixture. In a medium bowl, gently toss 1 cup of sliced strawberries, 1 cup of blueberries, and 1 cup of raspberries with 1 tablespoon of honey and 1 teaspoon of lemon zest. Let sit for 10 minutes to allow flavors to meld.

In a small bowl, whisk 3 cups of Greek yogurt with 2 tablespoons of maple syrup until smooth.

To assemble the parfaits: In 5 clear glasses or mason jars, layer 2 tablespoons of granola at the bottom, followed by 3 tablespoons of sweetened yogurt, and 2 tablespoons of the berry mixture.

Repeat the layers once more, ending with a final sprinkle of granola and a few fresh berries on top.

Refrigerate the parfait cups for at least 30 minutes before serving to allow flavors to develop.
