For an extra special touch, try making your own granola the night before - it's surprisingly simple and allows you to control the sweetness and ingredients. If you're short on time, layering these parfaits the night before works beautifully, just add the granola right before serving to maintain its crunch.

3 cups plain Greek yogurt
4 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup store-bought granola
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
1/4 cup sliced almonds, toasted
8 leaves fresh mint leaves

In a medium bowl, combine 3 cups of Greek yogurt with 2 tablespoons of honey, 1 teaspoon of vanilla extract, and 1 teaspoon of lemon zest. Stir until well combined and smooth.

Toast 1/4 cup of sliced almonds in a dry skillet over medium heat for 3-4 minutes until lightly golden and fragrant, stirring frequently to prevent burning. Set aside to cool.

Wash all berries thoroughly. Hull and slice 1 cup of strawberries. Keep 1 cup each of blueberries and raspberries whole.

Select 4 clear glasses or mason jars for assembly.

Begin layering by placing 2 tablespoons of granola at the bottom of each glass.

Add a 3-tablespoon layer of the honey-yogurt mixture on top of the granola in each glass.

Add a layer of mixed berries (about 2 tablespoons per glass).

Repeat the layers: add another 2 tablespoons of granola, followed by 3 tablespoons of yogurt mixture, and another layer of berries.

Top each parfait with a final layer of yogurt (about 2 tablespoons per glass).

Finish each parfait with a sprinkle of remaining granola, toasted almonds, a drizzle of the remaining 2 tablespoons of honey (1/2 tablespoon per parfait), and garnish with fresh mint leaves.
