For extra fluffy waffles, separate the eggs and beat the whites until stiff peaks form, then fold them into the batter as the final step. If you're short on time, frozen mixed berries work perfectly for the compote and don't need to be thawed first.

2 cups mixed berries (strawberries, blueberries, raspberries)
3 tablespoons sugar
1 tablespoon lemon juice
1 teaspoon cornstarch
1 tablespoon water

In a large bowl, whisk together 1 cup whole wheat flour, 1/2 cup all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon.

In a separate bowl, beat 2 large eggs, then add 1 3/4 cups milk, 1/4 cup vegetable oil, 2 tablespoons honey, and 1 teaspoon vanilla extract. Whisk until well combined.

Pour the wet ingredients into the dry ingredients and stir just until combined. Some lumps are okay; do not overmix.

Preheat your waffle iron according to manufacturer's instructions and lightly coat with cooking spray.

Pour about 1/2 cup batter (or the amount recommended for your waffle iron) onto the preheated iron. Close and cook until the waffle is golden brown, about 3-5 minutes.

While the waffles are cooking, prepare the berry compote. In a medium saucepan, combine 2 cups mixed berries, 3 tablespoons sugar, and 1 tablespoon lemon juice.

Bring the berry mixture to a simmer over medium heat, stirring occasionally. Cook for about 5 minutes until berries begin to break down.

In a small bowl, mix 1 teaspoon cornstarch with 1 tablespoon water to create a slurry. Stir this into the simmering berries.

Continue cooking the compote for 1-2 minutes until it thickens slightly. Remove from heat.
