Chef's Note
For the best flavor, let the assembled wraps rest for 10 minutes before serving to allow the dressing to permeate the ingredients. You can also prepare these wraps the night before and refrigerate them tightly wrapped in parchment paper for a grab-and-go lunch. The prosciutto can be substituted with ham if prosciutto is unavailable.

4 each large flour tortillas
4 cups mixed greens
8 oz thinly sliced prosciutto
4 oz thinly sliced salami
8 slices thinly sliced provolone cheese
1 cup roasted red peppers
1 cup artichoke hearts, drained and chopped
1/2 cup red onion, thinly sliced
1/4 cup fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
2 tsp Dijon mustard
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp freshly ground black pepper

In a small bowl, whisk together 2 tbsp of extra virgin olive oil, 1 tbsp of balsamic vinegar, 2 tsp of Dijon mustard, 1 tsp of Italian seasoning, 1/2 tsp of salt, and 1/4 tsp of black pepper to make the dressing.

Lightly toast the 4 flour tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable.

Lay the tortillas flat on a clean work surface and spread 1-2 tsp of the dressing on each tortilla.

Layer each tortilla with 2 slices of provolone cheese, 2 oz of prosciutto, and 1 oz of salami, leaving about an inch of space around the edges.

Distribute 1 cup of mixed greens, 1/4 cup of roasted red peppers, 1/4 cup of chopped artichoke hearts, and 2 tbsp of sliced red onion evenly among the tortillas.

Sprinkle 1 tbsp of fresh basil leaves over each wrap.

Drizzle the remaining dressing over the fillings.

To wrap, fold in the sides of each tortilla, then roll from the bottom up, tucking in the ingredients as you go.

If desired, warm the completed wraps in a panini press or skillet for 1-2 minutes to slightly melt the cheese and seal the wrap.

Slice each wrap diagonally in half and serve immediately with any remaining mixed greens on the side.
