Chef's Note
These cookie bars have been protein-boosted to make them more filling and nutritious while still being kid-friendly. For a softer, more gooey center, reduce the baking time by 2-3 minutes. You can store any leftovers in an airtight container for up to 3 days, or freeze them for a quick treat later!

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter
1/3 cup brown sugar
1 teaspoon vanilla extract
1/4 cup milk
1/3 cup chocolate chips
1/4 cup protein powder (vanilla)
1/4 cup Greek yogurt
Instructions
- 1
Preheat your oven to 350°F (175°C) and line a small 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- 2
In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup protein powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
- 3
In a separate large bowl, melt 1/4 cup unsalted butter in the microwave (about 30 seconds). Add 1/3 cup brown sugar and whisk until combined.
- 4
Add 1 teaspoon vanilla extract, 1/4 cup milk, and 1/4 cup Greek yogurt to the butter mixture and stir until smooth.
- 5
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
- 6
Fold in 1/3 cup chocolate chips, reserving a small handful for topping.
- 7
Spread the batter evenly in the prepared baking pan and sprinkle the remaining chocolate chips on top.
- 8
Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
- 9
Allow to cool in the pan for 10 minutes, then use the parchment paper to lift the bars out of the pan.
- 10
Cut into 2 large servings and enjoy warm or at room temperature.
