Chef's Note
For a smoother texture that toddlers might prefer, try blending half of the strawberries into a puree and swirling it into the cottage cheese. You can also prepare the components separately and let your toddler help with assembly for a fun activity. The cottage cheese mixture can be made a day ahead and stored in the refrigerator.

Ingredients
2 cups cottage cheese
2 cups fresh strawberries
2 tablespoons honey
1 teaspoon vanilla extract
1/2 cup granola
1/4 cup sliced almonds
1/2 teaspoon cinnamon
6 leaves fresh mint leaves
Instructions
- 1
Wash 2 cups of fresh strawberries, remove the stems, and slice them into quarters.
- 2
In a small bowl, mix 2 tablespoons of honey with 1 teaspoon of vanilla extract until well combined.
- 3
In a medium bowl, whip 2 cups of cottage cheese with a fork to break up any large curds and create a smoother texture.
- 4
Fold in the honey-vanilla mixture into the cottage cheese and stir until evenly incorporated.
- 5
In a dry skillet over medium-low heat, toast 1/4 cup of sliced almonds for about 3-4 minutes until lightly golden, stirring frequently to prevent burning. Remove from heat and let cool.
- 6
Divide the cottage cheese mixture between two serving bowls.
- 7
Top each bowl with 1 cup of sliced strawberries.
- 8
Sprinkle 1/4 cup of granola over each bowl.
- 9
Add the toasted almonds, dividing evenly between both bowls.
- 10
Dust each bowl with 1/4 teaspoon of cinnamon.
- 11
Tear the mint leaves and sprinkle on top as a garnish.
- 12
Serve immediately or refrigerate for up to 2 hours before serving.
