    Bring a large pot of salted water to a boil. Add 8 oz of elbow macaroni and cook for 2 minutes less than the package instructions (it will finish cooking in the oven). Drain and set aside.

    In a medium saucepan, melt 2 tbsp of butter over medium heat. Add 2 tbsp of flour and whisk continuously for 1-2 minutes to create a roux (it should be light golden in color).
