Chef's Note
For a time-saving option, you can make a larger batch of the granola on the weekend and store it in an airtight container for up to two weeks. This makes weekday breakfast assembly even quicker! For your toddler's portion, you might want to chop the fruit into smaller pieces and use a smaller serving glass to make it more manageable.

2 cups Greek yogurt, plain
2 tablespoons honey
1 teaspoon vanilla extract
1 cup old-fashioned rolled oats
1/4 cup sliced almonds
1/4 cup chopped walnuts
2 tablespoons brown sugar
1 teaspoon cinnamon
2 tablespoons butter
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1 medium banana, sliced
2 scoops protein powder, vanilla

In a small bowl, mix 2 cups of Greek yogurt with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Stir in 2 scoops of vanilla protein powder until well combined. Set aside in the refrigerator.

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, combine 1 cup of rolled oats, 1/4 cup of sliced almonds, 1/4 cup of chopped walnuts, 2 tablespoons of brown sugar, and 1 teaspoon of cinnamon.

Melt 2 tablespoons of butter in the microwave for about 30 seconds. Pour over the oat mixture and stir until everything is evenly coated.

Spread the granola mixture evenly on the prepared baking sheet and bake for 15 minutes, stirring halfway through, until golden brown. Remove from the oven and let cool completely.

Wash and prepare 1 cup of sliced strawberries, 1/2 cup of blueberries, and 1 sliced banana.

To assemble each parfait: In a tall glass or bowl, layer 1/4 of the yogurt mixture, followed by 1/4 of the homemade granola, and 1/4 of the mixed fruit. Repeat the layers once more.

Serve immediately or cover and refrigerate for up to 2 hours before serving.
