Chef's Note
For an extra special touch, warm the maple syrup before adding it to the brown sugar mixture. This enhances the maple flavor and helps the sauce come together more smoothly. If serving to a younger toddler, you can chop the walnuts more finely or omit them if there are concerns about choking hazards.

Ingredients
4 slices thick-cut brioche bread
3 tablespoons unsalted butter
4 tablespoons brown sugar
3 tablespoons pure maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup chopped walnuts
1 large sliced banana
1 cup Greek yogurt
2 teaspoons honey
Instructions
- 1
In a small saucepan, combine 2 tablespoons of butter, 4 tablespoons of brown sugar, 3 tablespoons of maple syrup, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt.
- 2
Heat the mixture over medium-low heat, stirring frequently until the sugar dissolves and the sauce is smooth, about 3-4 minutes. Remove from heat and set aside.
- 3
In a small dry skillet, toast 1/4 cup of chopped walnuts over medium heat for 3-4 minutes until fragrant, stirring occasionally to prevent burning. Remove from heat and set aside.
- 4
Preheat a large skillet or griddle over medium heat. Add the remaining 1 tablespoon of butter and allow it to melt.
- 5
Place 4 slices of brioche bread on the skillet and cook for 2-3 minutes until golden brown on the bottom.
- 6
Flip the bread slices and cook for another 2 minutes until the second side is golden brown.
- 7
Transfer the toast to serving plates and immediately drizzle with the warm maple brown sugar sauce, dividing it equally among the slices.
- 8
Top each slice with sliced banana and toasted walnuts.
- 9
In a small bowl, mix 1 cup of Greek yogurt with 2 teaspoons of honey until well combined.
- 10
Serve the toast with a side of the honey-sweetened Greek yogurt for dipping or spreading.
