Chef's Note
Deer meat (venison) makes a leaner and more flavorful alternative to beef in this classic Italian dish. If the venison tastes too gamey, you can add 1 tablespoon of Worcestershire sauce to the sauce to help balance the flavor.

1 pound ground deer meat
2 tablespoons olive oil
1 medium onion
3 cloves garlic
2 tablespoons tomato paste
28 ounces crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1 pound spaghetti
1/2 cup grated Parmesan cheese

Fill a large pot with water, add 1 tablespoon of salt, and bring to a boil for the pasta.

While waiting for the water to boil, dice 1 medium onion and mince 3 cloves of garlic.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Add the minced garlic to the skillet and cook for 30 seconds until fragrant.

Add 1 pound of ground deer meat to the skillet, breaking it up with a wooden spoon. Cook for about 5 minutes until browned.

Stir in 2 tablespoons of tomato paste and cook for 1 minute.

Add 28 ounces of crushed tomatoes, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir well to combine.

Reduce heat to medium-low and simmer the sauce for 10 minutes, stirring occasionally.

Meanwhile, add 1 pound of spaghetti to the boiling water and cook according to package directions until al dente (usually 8-10 minutes).
