2 cups spinach
1/2 medium red bell pepper
3 stalks green onions
3 tablespoons nutritional yeast

1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with olive oil or line with silicone muffin cups.

Finely chop 2 cups of spinach and dice 1/2 red bell pepper into small pieces.

Thinly slice 3 stalks of green onions, separating white and green parts.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the white parts of green onions and sauté for 1 minute.

Add diced red bell pepper and cook for 2 minutes until slightly softened.

Add chopped spinach and cook for 1-2 minutes until wilted. Remove from heat and let cool slightly.

In a large bowl, whisk together 4 large eggs and 2 large egg whites until well combined.
