Chef's Note
For the crispiest tofu, make sure to press it thoroughly to remove excess moisture. If you're short on time, you can use pre-pressed tofu. The key to a great stir-fry is having all ingredients prepped before you start cooking, as the process moves quickly once you begin.

Ingredients
16 oz extra-firm tofu
2 tbsp cornstarch
3 tbsp low-sodium soy sauce
1 tbsp rice vinegar
2 tbsp honey
2 tbsp fresh ginger
3 cloves garlic
1/2 tsp red chili flakes
2 tbsp sesame oil
2 cups broccoli florets
1 medium red bell pepper
2 medium carrots
1 cup snap peas
4 stalks green onions
1 tbsp sesame seeds
2 cups brown rice
Instructions
- 1
Press the 16 oz of tofu between paper towels with a heavy object for 15 minutes to remove excess moisture. Meanwhile, cook 2 cups of brown rice according to package instructions.
- 2
Cut the pressed tofu into 1-inch cubes and toss with 2 tbsp cornstarch until evenly coated.
- 3
In a small bowl, whisk together 3 tbsp low-sodium soy sauce, 1 tbsp rice vinegar, 2 tbsp honey, 2 tbsp minced fresh ginger, 3 minced garlic cloves, and 1/2 tsp red chili flakes to make the sauce.
- 4
Slice 1 medium red bell pepper into thin strips, julienne 2 medium carrots, and chop 4 stalks of green onions (reserve some for garnish).
- 5
Heat 1 tbsp sesame oil in a large wok or non-stick skillet over medium-high heat. Add the tofu cubes and cook for 2-3 minutes on each side until golden and crispy. Remove and set aside.
- 6
In the same pan, add the remaining 1 tbsp sesame oil. Add broccoli florets and carrots, stir-fry for 3 minutes.
- 7
Add red bell pepper and snap peas, stir-fry for another 2 minutes until vegetables are crisp-tender.
- 8
Return the tofu to the pan, pour in the sauce, and toss everything together. Cook for 2 minutes until the sauce thickens and coats everything evenly.
- 9
Serve the stir-fry over brown rice, garnish with sliced green onions and 1 tbsp sesame seeds.
