  • 2 whole lemon

  • 4 cloves garlic

  • 3 sprigs fresh rosemary

  • 5 sprigs fresh thyme

  • 3 tbsp olive oil

  • 1 tbsp dijon mustard

  • 2 tsp honey

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 3/4 cup couscous

  • 1 cup chicken broth

  • 1 cup cherry tomatoes

  • 1 medium cucumber

  • 1 medium yellow bell pepper

  • 1/4 cup red onion

  • 1/4 cup kalamata olives

  • 1/4 cup fresh mint

  • 1/4 cup fresh parsley

  • 2 tbsp lemon juice

  • 1 tbsp red wine vinegar

    Pat the chicken thighs dry with paper towels and place them in a large bowl.

    Zest one lemon and set aside the zest. Cut both lemons in half, squeezing the juice from one lemon into a small bowl.
