Chef's Note
For a time-saving tip, prepare the avocado mixture and tomato topping the night before and store in airtight containers in the refrigerator. Just toast the bread and cook the eggs in the morning for a quick weekday breakfast. If you prefer a softer yolk, cook the eggs for less time, about 2-3 minutes.

8 slices whole grain bread
8 whole large eggs
2 large ripe avocados
1 cup cherry tomatoes
1/4 cup red onion
1 tablespoon fresh lime juice
2 tablespoons olive oil
2 tablespoons fresh cilantro
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup low-fat Greek yogurt

Slice the cherry tomatoes in half and finely dice the red onion. Chop the cilantro leaves.

In a medium bowl, mash the 2 avocados with 1 tablespoon of lime juice, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Mix in half of the diced red onion and half of the chopped cilantro into the avocado mixture.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Crack 8 eggs into the skillet (you may need to do this in batches). Cook for about 3-4 minutes for sunny-side up, or flip for over-easy eggs.

While the eggs are cooking, toast 8 slices of whole grain bread until golden brown.

Spread the avocado mixture evenly onto each slice of toast (about 2 tablespoons per slice).

Top each toast with a fried egg.

In a small bowl, combine the halved cherry tomatoes, remaining red onion, remaining cilantro, 1 tablespoon of olive oil, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Spoon the tomato mixture over the eggs and toast.

Mix the red pepper flakes into the Greek yogurt and serve a dollop on the side of each plate.
