    Preheat oven to 425°F (220°C).

    Rinse 2 cups of brown rice under cold water. Cook according to package instructions (typically 2 cups rice to 4 cups water, simmer for 35-40 minutes).

    Peel 4 large sweet potatoes and cut into 1-inch cubes. Toss with 2 tbsp olive oil, 1/2 tsp salt, and 1/2 tsp black pepper on a baking sheet.

    Roast sweet potatoes for 25-30 minutes, turning halfway through, until tender and slightly caramelized.

    While potatoes are roasting, mince 3 cloves of garlic and grate 1 tbsp of fresh ginger.
