In a large bowl, mix 3 cups of Greek yogurt with 4 scoops of vanilla protein powder, 2 tablespoons of honey, and 1 teaspoon of vanilla extract until smooth. Refrigerate while preparing other components.

Core and dice 3 large apples into small cubes (about 1/2 inch). Toss with 1 tablespoon of lemon juice to prevent browning.

In a medium saucepan over medium heat, melt 1 tablespoon of butter. Add the diced apples, 1 1/2 teaspoons of cinnamon, 1/4 teaspoon of nutmeg, and 2 tablespoons of brown sugar.

Cook the apple mixture for 8-10 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from heat and let cool for 10 minutes.

While the apples are cooling, prepare the granola topping. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a bowl, combine 1 cup of rolled oats, 1/4 cup of sunflower seeds, 2 tablespoons of ground flaxseeds, remaining 1/2 teaspoon of cinnamon, and 1/8 teaspoon of salt.

Spread the oat mixture evenly on the prepared baking sheet and bake for 15-18 minutes, stirring halfway through, until golden brown and fragrant. Let cool completely.

To assemble the parfaits: In 4 glass jars or containers, layer 1/4 of the yogurt mixture, followed by 1/4 of the cooled cinnamon apples, and 1/4 of the granola topping. Repeat layers if desired or save some components separately if packing for school.

Really delicious but a bit sweet. Could do it without the honey in the yogurt.
