Chef's Note
These energy bites are perfect for school lunches as they're completely nut-free! For best texture and flavor development, allow the mixture to cool slightly before forming into balls. If the mixture seems too dry, add a tablespoon of water; if too wet, add more oats. You can customize these with different dried fruits or seeds based on preference while maintaining the same basic ratios.

1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/3 cup dried cranberries
1/3 cup dried apricots, chopped
1 cup protein powder (vanilla)
1/3 cup honey
1/2 cup sunflower seed butter
1/4 cup flaxseed meal
3 tablespoons chia seeds
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup mini chocolate chips (optional)

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

Spread 2 cups of rolled oats on the prepared baking sheet and toast in the oven for 10-12 minutes until lightly golden, stirring halfway through.

While oats are toasting, toast 1/2 cup sunflower seeds and 1/2 cup pumpkin seeds in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant. Set aside to cool.

In a large mixing bowl, combine the cooled toasted oats, toasted seeds, 1/3 cup dried cranberries, 1/3 cup chopped dried apricots, 1 cup protein powder, 1/4 cup flaxseed meal, 3 tablespoons chia seeds, 1 teaspoon cinnamon, and 1/4 teaspoon salt.

In a small saucepan over low heat, warm 1/3 cup honey and 1/2 cup sunflower seed butter until smooth and well combined, about 3 minutes.

Remove from heat and stir in 1 teaspoon vanilla extract.

Pour the warm honey mixture over the dry ingredients and stir thoroughly until everything is well coated and sticky.

If using, fold in 1/4 cup mini chocolate chips once the mixture has cooled slightly (but is still warm enough to be pliable).

Allow the mixture to cool for 5 minutes until it can be handled.

With slightly damp hands, firmly roll the mixture into 16 equal-sized balls (about 2 tablespoons each).

Place the energy bites on a parchment-lined tray and refrigerate for at least 1 hour to set.

Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.

The bites were good but there were not enough wet ingredients to ensure the balls were sticking together when making them. I made granola out of the remaining ingredients when they started falling apart and it was tasty!
