6 oz boneless, skinless chicken breast
3 cups romaine lettuce
2 fillets anchovy fillets
1 clove garlic clove
1 tsp Dijon mustard
1 tbsp lemon juice
1/2 tsp Worcestershire sauce

2 tbsp Parmesan cheese, freshly grated
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp Italian seasoning
4 tomatoes cherry tomatoes

Season 6 oz chicken breast with 1/4 tsp salt, 1/4 tsp black pepper, and 1/2 tsp Italian seasoning on both sides.

Preheat a grill pan or outdoor grill to medium-high heat. Lightly brush with a small amount of oil to prevent sticking.

Grill the chicken breast for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing.

While the chicken cooks, wash and dry 3 cups of romaine lettuce, then tear into bite-sized pieces and place in a large bowl.

For the dressing, mince 2 anchovy fillets and 1 garlic clove into a paste using the side of your knife.

In a small bowl, combine the anchovy-garlic paste with 1 tsp Dijon mustard, 1 tbsp lemon juice, and 1/2 tsp Worcestershire sauce. Whisk well.

Slowly drizzle in 1 tbsp olive oil while whisking continuously to emulsify the dressing.

Slice the rested chicken breast into thin strips.

Halve 4 cherry tomatoes and add to the bowl with the romaine lettuce.
