Chef's Note
For meal prep, keep the dressing and avocado separate until ready to eat. The lime juice helps prevent the avocado from browning, but it's still best added fresh. You can also toast some pepitas (pumpkin seeds) for an extra crunch without adding significant carbs.

6 oz lean ground turkey
1 tsp taco seasoning (low-sodium)
2 cups romaine lettuce
1/4 cup cherry tomatoes
1/4 cup red bell pepper
2 tbsp red onion
1/2 small jalapeño
1/4 medium avocado
1 tbsp fresh cilantro
1 tbsp lime juice
1 tsp olive oil
1/4 tsp cumin
1/4 tsp garlic powder
1/8 tsp salt
1/8 tsp black pepper
2 tbsp low-fat Greek yogurt

Chop 2 cups of romaine lettuce, dice 1/4 cup of cherry tomatoes, 1/4 cup of red bell pepper, 2 tbsp of red onion, and 1/2 small jalapeño (remove seeds for less heat).

Dice 1/4 medium avocado and chop 1 tbsp of fresh cilantro. Set all vegetables aside.

Heat a non-stick skillet over medium heat. Add 6 oz of lean ground turkey and break it apart with a wooden spoon.

Cook the turkey for about 5 minutes until it begins to brown, then add 1 tsp of taco seasoning, 1/4 tsp of cumin, 1/4 tsp of garlic powder, 1/8 tsp of salt, and 1/8 tsp of black pepper.

Continue cooking the turkey for another 3-4 minutes until fully cooked through and no pink remains. Remove from heat and let cool slightly.

In a small bowl, mix 2 tbsp of low-fat Greek yogurt with 1/2 tbsp of lime juice to create a creamy dressing.

In a large bowl, combine the chopped romaine lettuce with the remaining 1/2 tbsp of lime juice and 1 tsp of olive oil. Toss to coat the lettuce.

Add the cooked ground turkey and all the chopped vegetables to the bowl with the lettuce.

Gently toss all ingredients together, then top with the Greek yogurt dressing and sprinkle with fresh cilantro.
