Ingredients
  • 8 oz large shrimp

  • 2 cups napa cabbage

  • 1/2 medium red bell pepper

  • 1/2 medium cucumber

  • 2 stalks green onions

  • 1/4 cup fresh cilantro

  • 2 tbsp fresh mint leaves

  • 1 tbsp lime juice

  • 1 tsp fish sauce

  • 1 tsp rice vinegar

  • 1 small garlic clove

  • 1 small red chili

  • 2 tsp olive oil

  • 1 tbsp unsalted peanuts

  • 1/2 tsp Stevia or monk fruit sweetener

    Peel and devein 8 oz of shrimp, then pat dry with paper towels.

    Thinly slice 2 cups of napa cabbage and place in a large bowl.

    Julienne 1/2 red bell pepper and 1/2 cucumber, then add to the bowl with cabbage.

    Thinly slice 2 green onions and roughly chop 1/4 cup cilantro and 2 tbsp mint leaves. Add to the bowl.

    In a small bowl, whisk together 1 tbsp lime juice, 1 tsp fish sauce, 1 tsp rice vinegar, minced garlic, minced chili, and 1/2 tsp sweetener to make the dressing.

    Heat 1 tsp olive oil in a non-stick skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat.
