For the freshest flavor, assemble these bites just before serving. If you need to prepare them in advance, you can slice the cucumber and mix the cream cheese spread ahead of time, then assemble just before serving. This prevents the cucumber from releasing water and becoming soggy.

1/2 medium English cucumber
3 oz smoked salmon
1 tbsp reduced-fat cream cheese
1 tsp fresh dill
1 tsp capers
1/4 medium lemon
1/8 tsp black pepper
1 tbsp red onion

Wash the cucumber thoroughly and pat dry with paper towels.

Slice the 1/2 English cucumber into approximately 12-15 rounds, about 1/4 inch thick.

In a small bowl, mix 1 tbsp reduced-fat cream cheese with 1/2 tsp of fresh dill (reserving the rest for garnish) and a squeeze of lemon juice from the 1/4 lemon.

Finely mince 1 tbsp of red onion and set aside.

Spread a small amount of the cream cheese mixture onto each cucumber slice.

Cut the 3 oz of smoked salmon into small pieces that will fit on top of the cucumber slices.

Place a piece of smoked salmon on top of each cucumber slice.

Garnish each slice with a few capers from the 1 tsp, a small piece of the remaining fresh dill, and a sprinkle of the minced red onion.

Squeeze a little lemon juice over the assembled cucumber slices and finish with a light sprinkle of 1/8 tsp black pepper.

Arrange on a serving plate and serve immediately, or refrigerate for up to 30 minutes before serving.
