For the best texture, don't overcook your zucchini noodles - they should retain some bite. If you find your zucchini releasing too much water, you can salt them and let them sit in a colander for 10 minutes before cooking to draw out excess moisture. This helps prevent a soggy final dish.

6 oz boneless skinless chicken breast

1/2 tsp Italian seasoning
1/4 tsp garlic powder

2 whole medium zucchini
1 cup fresh basil leaves

1 small garlic clove
1 tsp lemon juice
1 tbsp grated parmesan cheese
1/4 cup cherry tomatoes

Prepare the chicken: Place 6 oz chicken breast between two pieces of plastic wrap and gently pound to an even thickness. Season with 1/4 tsp salt, 1/8 tsp black pepper, 1/2 tsp Italian seasoning, and 1/4 tsp garlic powder.

Heat a grill pan over medium-high heat and brush with 1/2 tsp olive oil. Grill the chicken for 5-6 minutes per side until internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing.

While the chicken cooks, prepare the zucchini noodles: Using a spiralizer, turn 2 medium zucchini into noodles (or use a vegetable peeler to create ribbons).

Make the pesto: In a food processor, combine 1 cup fresh basil leaves, 1 tbsp pine nuts, 1 small garlic clove, 1 tsp lemon juice, and 1/2 tsp olive oil. Pulse until finely chopped but not completely smooth.

Heat a large non-stick skillet over medium heat. Add the remaining 1/2 tsp olive oil and sauté the zucchini noodles for 2-3 minutes until just tender but still slightly crisp.

Remove the skillet from heat and stir in the fresh pesto and 1 tbsp grated parmesan cheese. Toss gently to coat the noodles.

Slice the grilled chicken and arrange on top of the zucchini noodles. Garnish with 1/4 cup halved cherry tomatoes and 1/8 tsp red pepper flakes.
