1/4 cup cherry tomatoes

1 teaspoon fresh dill

Finely dice 2 tablespoons of red onion and mince 1 clove of garlic. Halve 1/4 cup of cherry tomatoes and roughly chop 2 cups of fresh spinach.

Heat a non-stick skillet over medium heat and lightly coat with olive oil cooking spray.

Add the diced red onion to the skillet and sauté for 2 minutes until translucent.

Add the minced garlic and cook for 30 seconds until fragrant.

Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted, stirring frequently.

Pour in 1 cup of egg whites and allow to set slightly for about 30 seconds.
