5 oz ground turkey (93% lean)
1 tsp olive oil
1/4 cup yellow onion
1 clove garlic
1 tsp curry powder
1/4 tsp ground turmeric
1/8 tsp ground cinnamon
1/4 tsp ground coriander
1 tsp tomato paste
1 tbsp raisins
1 tsp lemon juice
2 tbsp almond milk (unsweetened)
1 large egg white
1 leaf bay leaf
1/3 cup brown rice (cooked)
2 tbsp Greek yogurt (0% fat)
1 tbsp fresh cilantro
1/4 tsp salt
1/8 tsp black pepper

Heat 1 tsp of olive oil in a non-stick skillet over medium heat.

Add 1/4 cup of diced yellow onion and sauté for 3 minutes until translucent.

Add 1 minced garlic clove and cook for 30 seconds until fragrant.

Add 5 oz of ground turkey and cook for 5 minutes, breaking it up with a wooden spoon until browned.

Stir in 1 tsp curry powder, 1/4 tsp ground turmeric, 1/8 tsp ground cinnamon, and 1/4 tsp ground coriander. Cook for 1 minute to toast the spices.

Add 1 tsp tomato paste, 1 tbsp raisins, 1 tsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Stir to combine.

Add 1 bay leaf and cook for 2 minutes more.

In a small bowl, whisk together 2 tbsp unsweetened almond milk and 1 large egg white.

Pour the egg mixture over the turkey mixture and cook without stirring for 2 minutes until set.
