Chef's Note
Dukkah is a traditional Egyptian spice blend that adds wonderful texture and flavor to simple dishes. For the freshest flavor, make the dukkah right before serving, but you can prepare a larger batch and store it in an airtight container for up to 2 weeks. The blend works beautifully with the creamy cottage cheese, creating a protein-rich snack with North African flair.

3/4 cup cottage cheese (2% fat)
1 tablespoon hazelnuts
1 teaspoon sesame seeds
1/2 teaspoon coriander seeds
1/4 teaspoon cumin seeds
1/8 teaspoon black peppercorns
1/8 teaspoon sea salt
4 whole cherry tomatoes
1/4 cup cucumber
3 leaves fresh mint leaves
1/4 teaspoon lemon zest
2 crackers whole grain crackers

Toast 1 tablespoon of hazelnuts in a dry skillet over medium heat for about 3-4 minutes until fragrant and lightly browned, stirring frequently to prevent burning.

In the same skillet, toast 1 teaspoon of sesame seeds, 1/2 teaspoon of coriander seeds, and 1/4 teaspoon of cumin seeds for 1-2 minutes until aromatic, stirring constantly.

Transfer the toasted nuts and seeds to a mortar and pestle or small food processor. Add 1/8 teaspoon of black peppercorns and 1/8 teaspoon of sea salt.

Grind the mixture until coarsely crushed but not powdered - dukkah should have some texture.

Dice 1/4 cup of cucumber into small cubes and halve 4 cherry tomatoes.

Finely chop 3 mint leaves and set aside for garnish.

Place 3/4 cup of cottage cheese in a serving bowl and create a well in the center.

Sprinkle 2 teaspoons of the dukkah spice mixture over the cottage cheese (store remaining dukkah in an airtight container for future use).

Arrange the diced cucumber and halved cherry tomatoes around the cottage cheese.

Garnish with chopped mint leaves and 1/4 teaspoon of lemon zest.

Serve with 2 whole grain crackers on the side.
